From their grandparents they received not only the land, but the care and dedication it needs. Nowadays, the young farmers of Coristanco made the leap from the potatoes or beans they cultivated -first their grandparents and then their parents-, to the introduction of crops such as green beans, pink bean, tear peas, tear peas, chervil root... even beans for Galician broth, which was in danger of extinction. Their secret is to be sustainable, to pamper the land where their vegetables grow, to connect with the land to give it the best and to make it respond as well. As did their grandparents. They cultivate in a traditional way, taking advantage of resources to make their production sustainable, but at the same time they are in a constant process of innovation. They collaborate with the Biological Mission of Galicia, which depends on the Higher Center for Scientific Research (CSIC), but they also carry out their own tests on the field. All these crops are grown on farms they own in Coristanco, but there is also a neighbor who leaves them for free just to not see them abandoned.
