Our Bresaola is the perfect non-pork, all-beef option for your charcuterie board too! We use Ohio-raised Wagyu Beef Eye of Round from Sakura Wagyu Farms, delicately flavored with a blend of aromatic herbs and spices, aged four months. Bresaola is traditionally sliced very thin and served with a drizzle of olive oil, lemon juice, and fresh ground pepper. Our Herbed Wagyu Bresaola takes about 3-4 months to cure, dry and age properly, so we only make it in very limited quantities. Refrigeration is recommended, but not required. **No nitrate/nitrite added** Wine & Cheese pairings: Serve our award winning Bresaola with a delicate white wine like Pinot Grigio, light red wine like Beaujolais or any Rosé. Pairs well with Burrata cheese.
