About Vermont Salumi

Our small team of fewer than ten takes great pride in offering the highest quality charcuterie. Based in Barre, Vermont, we work out of a beautiful curing facility equipped with several controlled aging rooms, where we age, slice, package, and ship products we’re proud to share. Owner Peter Roscini Colman grew up on an organic farm in Vermont and spent his summers in Umbria with his babbo’s family. There, he apprenticed with the Norcini—the famed butchers of Umbria—learning the time-honored methods, techniques, and traditions of salumi-making. Rooted in these traditions built around quality food and family, Pete’s passion is to provide authentic charcuterie made with all-natural ingredients.
