Whey Blue® is our newest creation, a full cream, raw milk Texas blue cheese with the terroir of great Texas milk. We make this cheese in the style of creamy French blue cheeses, but with a more subtle blue veining - perfect for the Texas palate. This cheese is aged for 60 to 90 days and will surprise you with its complexity, aromas of toasted biscuits and earthiness, and a nice subtle mottling of blue. Try it with Texas honey... it’s a winner! Wedge Size is approximately 6.0 to 6.5 oz.
