Mount Bethel Blue is Green Dirt Farm’s newest addition to our family of cheeses, and it carries a name close to home. We named it after Mount Bethel Road, the winding backcountry lane that leads to our farm in Weston—a reminder that every wheel of cheese we make begins with this place, our pastures, and our flock. Made with 100% sheep’s milk, Mount Bethel Blue is a rarity in the American artisan cheese world. While Europe is known for iconic sheep’s milk blues such as Roquefort in France and Cabrales in Spain, very few cheesemakers in the United States work exclusively with sheep’s milk to create this style. That makes Mount Bethel Blue a distinctive and exciting addition to any cheese lover’s repertoire. The flavor profile is rich, creamy, and beautifully balanced. It offers the savory tang and depth that blue cheese lovers crave, but with a smoothness and gentle sweetness unique to sheep’s milk that makes it approachable even for those new to the style. Its texture crumbles easily over salads, yet is luscious enough to enjoy in wedges on its own. Mount Bethel Blue also shines in pairings. A drizzle of honey highlights its natural sweetness, while Port or Madeira and dried fruits create a classic, indulgent match.
