Description
This very special organic barley miso from Yamaki Jozo is aged from 8 to 12 months depending on the season in which it is made (miso ages slower in colder months). The gentle aging and Yamaki Jozo’s commitment to sourcing quality ingredients gives this miso a wonderful umami aroma reminiscent of caramel, as well as a pleasantly funky/nutty flavor with a nice salty finish, making this soft miso perfect for miso soups, nabe dishes, stews, dressings, desserts, etc. Keep refrigerated. Ingredients: water, organic soybeans, organic barley, sea salt, koji (contains: soy, wheat) About the producer: Founded in 1902 in Saitama Prefecture outside of Tokyo, Yamaki Jozo produces their traditionally brewed soy sauce and miso using Japan-grown whole soy beans, wheat, salt and water from a spring at the top of a local mountain.

The devotion to sourcing & working with multi-generational family farms and businesses is incredible and the products are so good & the quality is impressive. They are worth every dollar. They don't "fly" off our shelves but it's for the more serious cooks! We cannot wait to get more and tell the stories of the brands!

Love the soy sauce. Would recommend asking the company about expiration dates on products before they send them out. My soy sauce and ponzu were barely a year out.
