It’s an exquisite blend of shio koji (salted rice koji paste) and garlic paste, which exhibits substantial umami and an appetizing garlic flavor. This energy-boosting seasoning was developed by Yokofuku, a garlic farm in Kagoshima Prefecture, and is crafted from their own crops, grown in mild weather with fertile soil. One bottle of Shio Koji Garlic Paste (150g / 5.3 oz) contains two whole bulbs of garlic. Also, rice koji is a probiotic food that helps improve gut health. You can use the paste not only for cooking dishes like pasta, grilled meat and fish, sautéed vegetables, but also as a condiment. Because enzymes in rice koji can break down proteins, it is ideal for marinating meat, fish, and vegetables as it enhances their flavors while making them juicy and tender. No artificial flavorings, colorings, preservatives, or additives are used.

Superb selection of really unique items! I was initially a little skeptical on how these would fit in to our store, as we are mostly cheese and charcuterie focused, but they've really taken off. Packaging is always superb, and I love the flexibility to order single items - makes it much easier to try new things. My one quibble would be that the Faire descriptions on some items aren't for the right item - luckily it is easy to go to Umami Insider's website to get correct text.

this review is difficult for me because I enjoy their products, but they don’t seem to care about customer service and good protective packaging. three separate shipments were damaged, and Umami didn’t make efforts to change the protective packaging. I asked her to individually wrap each bottle after the first damaged shipment..She literally texted no. Notice only one or two pieces of bubble wrap in the picture. Wafer thin boxes. Faire tried to negotiate on my behalf. They ignored Faire.
