Description
Made with sheep's milk pasteurized at 72°C, cooled to 32°-35°C, starter cultures and four types of pepper are added, followed by a fermentation pause; rennet is added and coagulation occurs – breaking the curd, pouring it into molds, salting in brine, and drying in a cold room at 6°-8°C. It is aged for over 100 days in virgin beechwood crates to impart the perfect final aroma. Sensory Characteristics The cheese is white tending towards straw yellow in color, chalky, and slightly flaky when cut. The aroma of the four types of pepper releases the rich and unique flavor of freshly ground pepper.
