Whole wheat friselle Freselle (or friselle) are a traditional product of Southern Italian cuisine, particularly popular in Campania and Puglia. This is biscuit bread with a characteristic ring shape, obtained by double cooking. Traditionally, the first cooking takes place until a slightly golden bread is obtained, which is then cut in half and baked again to obtain the typical crunchy texture. Historically, freselles were prepared in large quantities to be preserved and consumed over time, being a food resistant to mold thanks to their low humidity. They are often soaked in water to soften them before being seasoned with fresh tomato, olive oil and basil, or accompanied by soups and salads. Whole wheat freselles represent a healthier and more nutritious interpretation of classic freselles.
