Description
[Original Case Pack: 12 units] Tamari soy sauce is known to have a richer flavor and aroma than standard soy sauce due to its ingredients and production process. Also, it uses soybean koji instead of barley koji as a fermentation agent, making it gluten-free. Igeta Shoyu’s Yuzu-Infused Tamari Soy Sauce maximizes the robust flavor of tamari soy sauce and adds a generous helping of refreshing yuzu juice, sourced from local farms in Shimane Prefecture. It’s also blended with dashi made with katsuobushi (bonito flakes) and kombu kelp to deliver a substantial umami and ponzu-like taste. The company has been committed to producing authentic soy sauce made using a traditional and natural brewing method since its foundation in 1912. They are proud that they use local spring water from Hamayama Yusuigun, one of the best 100 water sources in the Heisei Era as recognized by the Japanese Ministry of the Environment. No MSG or artificial flavorings are used.

this review is difficult for me because I enjoy their products, but they don’t seem to care about customer service and good protective packaging. three separate shipments were damaged, and Umami didn’t make efforts to change the protective packaging. I asked her to individually wrap each bottle after the first damaged shipment..She literally texted no. Notice only one or two pieces of bubble wrap in the picture. Wafer thin boxes. Faire tried to negotiate on my behalf. They ignored Faire.

Superb selection of really unique items! I was initially a little skeptical on how these would fit in to our store, as we are mostly cheese and charcuterie focused, but they've really taken off. Packaging is always superb, and I love the flexibility to order single items - makes it much easier to try new things. My one quibble would be that the Faire descriptions on some items aren't for the right item - luckily it is easy to go to Umami Insider's website to get correct text.
