The harvest of the reduced amount of grapes due to the age of the vine takes place from mid-September to mid-October, specifically for optimal production of the sparkling wine base wine. The grapes are processed gently - sometimes with whole cluster pressing. This Schilcher sparkling wine has been in contact with the fine lees for nine months, which is reflected in the quality and fine mousseux.
