Our Boteh find the origin of their name in the history of Ancient Persia. Boteh comes from the term “Boteh Gegheh”, Boteh term alone meaning “flower bouquet”. The Boteh Gegheh evokes in its form the frowning of a cypress, iconic coniferous of the Persian Emperors. “The associations found in my preparations come from my culinary experience, mostly Iranian cuisine, rich in flavors and very fragrant. It was she who gave me this sensitivity to spices. First of all, having grown up with two women (grandmother and mother) renowned for transforming hot water into a great place (translation literal of a Persian expression), my first dish - kholeshte gheimeh - I cooked it at 8 years old. As for the preparation of Boteh, it goes back to the Iranian habits concerning breakfasts that are accompanied by homemade jams, prepared by my mother or grandmother.
