Hi, I started baking high Omega-3 Breakfast Cookies soon after writing a history of the Omega-3s for the University of California Press (The Queen of Fats: Why Omega-3s were Removed from the Western Diet and What we can do to Replace them, 2006). I used the fact that flax seed; canola oil and walnuts are rich in Omega-3s to adapt some of my favorite family recipes and created an all natural Breakfast Cookie that is naturally rich in Omega-3s. With my knowledge of the science, I also made sure that my Breakfast Cookies have a healthy balance of Omega-6s to Omega 3s, which means that their Omega-3s will actually wind up in your cells! I hope you'll give them a try because they're the ultimate convenience food. A satisfying and delicious breakfast to go -- or anytime snack. Just sweet enough for kids but not too sweet for adults.
