Our Elk Salami (5.5oz) is a blend of Elk Meat and Berkshire Pork - infused with Red Port Wine, Red Dutch Cocoa Powder, and Pink Peppercorn. The salami is fermented and aged in a dry room for three months. Elk Salami is the newest addition to the Angel's Salumi Family. Artisanal salumi is always made with a natural pork or beef casing. This salami comes in an easily removable natural casing, showcasing the artisanal quality of our salumi.
