Sevi Exceptional Botanic grow that thyme on their small family farm in the semi-mountainous hills near Drama, in the northern Greek village of Tichos. The 13-acre farm sits at roughly 370 metres altitude, where cool nights and long dry summers concentrate essential oils in every leaf. Sevi's thyme is harvested entirely by hand, then dried slowly in the family's purpose-built drying room — no industrial kilns, no rushed shelves. What you get is thyme that still smells like the hillside it came from: warm, aromatic, gently floral, with a soft camphor edge and a long finish.
