When you look at the cross-section of a Ceylon stick, you can see the layers clearly — like a cigar made of thin paper. The flavor is delicate, sweet, and floral. Ceylon is naturally very low in coumarin, making it suitable for regular, daily use. * Cassia cinnamon sticks (Cinnamomum cassia — our Organic Cassia Cinnamon Sticks) are made from a single thick, hard layer of bark rolled into a dense, solid tube. Much harder and more difficult to break or grind. The flavor is bold, spicy-sweet, and intensely pungent. Cassia is higher in coumarin and is better suited for occasional use in bold applications like mulled wine, biryani, and holiday baking where its robust character is an asset. The visual test: Snap or bend the stick. Ceylon breaks easily into layers — you can crumble it with your fingers. Cassia is hard as wood and will not crumble.
