Process: Washed About Parainema: For over a decade, our partner Jorge Lagos has been experimenting with new coffee varietals on his farm, Finca Santa Teresa, in Dipilto, Nicaragua. His Parainema trees thrive at 1200–1300 meters above sea level, where cool nights and rich volcanic soil help develop dense, sweet cherries. After careful harvesting, this lot is fully washed to highlight the clarity and structure that Parainema is known for. In the cup, Jorge’s Parainema is comforting and layered: brown sugar sweetness, a nutty backbone, gentle spice, and a sweet fruit note that lifts the finish. Directly sourced from Jorge and roasted to showcase its balance, this coffee is equally at home as a daily drip or a slower weekend pourover. Sourcing Philosophy: We source specialty coffee beans directly from small holder farmers through long-term partnerships built on ensuring fair and livable wages to the farm workers who do the hard work of picking the coffee. Our premium coffee beans are fresh roasted in Brooklyn using a small batch roasted coffee approach that highlights the character of each single origin coffee.
