Container of 1,500 g NOTE: These cocoa nibs are not roasted but, like all cocoa nibs on sale, they are fermented. In the fermentation process, which takes place in the country of origin, cocoa reaches temperatures of up to 50ºC. Therefore, although it has not been roasted, it has been fermented in order to develop aromas, flavors and lower its level of acidity and astringency. In order to achieve greater food safety, we strongly recommend roasting it at a temperature of about 120ºC so as not to lose the natural aromas contained in this cocoa.
