La Truitelle ecological preserves contain, depending on their format, two to four small whole rainbow trout, canned by hand. Their artisanal farming, in the crystal clear waters of springs and mountain streams, gives them a texture very similar to that of wild fish. Pre-steamed, they are topped with an oil-free lemon and basil marinade, which brings a touch of acidity to this low-fat but taste-rich recipe!

I can't buy these again—La Truitelle has beautiful branding and a great story—but unfortunately, these tins were a letdown. I purchased both the Mountain Troutlings with Wasabi and Mountain Troutlings with Kaffir Lime, and multiple customers reached out with the same complaints: the fish is unpleasantly mushy, and the unique flavor notes promised on the label (wasabi, horseradish, kaffir lime) are barely detectable, if at all. I’ve tasted them myself and sadly have to agree.
