Discover Caciocavallo: the king of Apulian cheeses and one of the oldest in Italy. Shaped like a pear, this firm stretched-curd cheese is made from pasteurized cow's milk. Its rind is coated with food-grade paraffin. Milky and very lightly salted, it melts in the mouth. Its delicate butter and almond flavor will be more or less pronounced depending on its maturation. The longer it ages, the more character it will have! This version is the fresh one, with an aging of 3 months. It will melt perfectly on your pizzas, in your pastas and risottos, and it can easily replace Parmesan in your recipes. • Packaging: sold as whole pieces of approximately 2 kg and wrapped in food-grade paper. • Price/kg: €22.85 excl.
