A Virgin olive oil that refers to tradition. Olives used to be "rested" in attics before extracting the oil to achieve better yields. This process gave the oil aromas of black olive, tapenade, and truffle. This highly prized oil had disappeared with the advent of modern mills. We have recreated it by "maturing" the olives in the absence of air and moisture with precise temperature control before oil extraction. The aromas are powerful: black olive, black tapenade, truffle.
