Dry Cottage Curds, also known as dry-curd cottage cheese or farmer’s cheese, are the solid curds that remain after milk is cultured and slowly heated, without the addition of cream or milk at the end. This results in a crumbly, slightly tangy texture that is much drier than traditional cottage cheese.

I really wanted to love this cheese but wasn’t able to sample much of it. The cheese was shipped in sub-standard cold transport packaging the first order. Cheese arrived warm, ice packs were melted. Creamery was very responsive. Offered to send another shipment with better packaging for transport. Unfortunately this package stalled in Ground Transport for many days. What cheese I got to sample was a bit sweet for my liking. Kiddos to the company for communication.
