The oil of dawn, only once a year. Nothing compares to the first day of harvest. Only then do the olives offer their peak of polyphenols and aroma. From that fleeting moment, Primer Día de Cosecha is born. This oil is not just another label: it is the purest moment of the olive grove transformed into a bottle. Only 1,500 units — hand-numbered. Once they disappear, there will be no restocking until the next harvest. Variety: 100% extra virgin Picual, pure expression of our Jaén olive grove. Polyphenols: we reach 700 mg/kg, well above the early harvest (≈610 mg). Color: intense, vibrant green, with natural reflections. Aroma: complex and deep: olive leaf, fresh grass, tomato plant, lavender... and fruity notes of green banana, apple, and green almond. On the palate: smooth, harmonious entry; then a touch of bitterness and a growing spiciness. Elegant and lasting finish. Acidity: ≈ 0.1 º — ultra-low, a sign of extreme quality. Production: harvested at dawn on the first day of the campaign, cold-milled in less than 4 hours. Yield: around 15-16 kg of olives to obtain 1 liter. Presentation: premium 500 ml bottle, with a handwritten label indicating the number of each bottle of the 1500 available.
