The clay-rich water is pumped into the river and brought to salt marshes. This salt, slowly dried in the sun, has a pink color given by the earth rich in iron oxides. Its texture is exceptional, very fine, flaky and melts in the mouth; its saltiness is very mild and delicate. Usage advice: This mild and delicate salt is suited to seasoning refined dishes and is preferably used as a finishing salt. It pairs well with noble fish, shellfish, delicate poultry and foie gras. Its texture wonderfully enhances well-seared or grilled red meats, scallops, and steamed or marinated vegetables. It heightens raw vegetables, composed salads and eggs.
