SARDINE FROM THE RÍA DE AROUSA POSSIBLY, THE BEST SARDINE IN THE WORLD They are caught inside the Ría de Arousa, in the area closest to the town of Rianxo, during the months of July and August, when they have the most fat. They are fished at dawn, with an empty stomach, thus facilitating the cleaning or gutting process. They have a very delicate and smooth texture in the mouth, with firmer and tastier flesh. They have been resting in the can since June 2021 to enhance their flavor and texture, a true delight.
