It’s a spice made from ground blackcurrant buds. Used this way, the buds don’t carry the sweet taste of the fruit itself, but instead bring a subtle peppery note — while still preserving a hint of blackcurrant’s signature tang. This woody, floral spice enhances the rich, mellow flavor of the (very) large fig chunks in this unique and addictive recipe.
