Our organic Sonora Soft White Wheat berries have a rich, soft, buttery texture.  The whole grain berries will cook in 20-30 minutes on the stovetop and can be used in pilafs, grain salads, and additives to soups. Sonora Heritage Soft White Wheat, also known as Sonora Blanca (Spanish), has persisted in the rural villages of Sonora Mexico since the late 1600s. Over the years White Sonora Wheat prompted a shift in the use of flour tortillas over corn tortillas in the “Borderland Cuisine,” referring to the shared food culture of northwest Mexico and the southwest United States. Its cultural antiquity has inspired a resurgence of the crop. When milled into a fine grind these berries can be used  1 : 1 in place of whole wheat pastry flour.  Bluebird's Sonora Wheat ranges between 13-14% protein, which is high for soft white wheat and attributed to our healthy regenerative soils.  Historically Sonora Wheat  has been used for tortillas in the borderland region of Sonora, Mexico.
