Our certified Organic Sonora Soft White Wheat berries offer a naturally rich, soft, and buttery texture. These whole grain berries cook in 20–30 minutes on the stovetop and are excellent in pilafs, grain salads, or added to soups for extra body and nutrition. When milled to a fine grind, Sonora can be used 1:1 in place of whole wheat pastry flour. Bluebird’s Sonora Wheat typically ranges between 13–14% protein, exceptionally high for a soft white wheat, thanks to the vitality of our regenerative soils.
