Turkey breast cut by hand into thin slices, which are flavored with spices and smoked with beech wood for many hours. Finally, they are slowly aged for 3 to 4 days in order to guarantee their softness and flavour. It is made according to an ancient recipe from northern Italy kept in the mountains of the Dolomites. Its flavor does not derive from an excessive use of spices (which often serve to cover the flavor of poor quality meat) but from a deep natural smoking and a slow dry curing process which guarantees its softness and the exaltation of the taste.
