About La Truitelle
After 12 years spent breeding several species of salmonids on one of the oldest organic fish farms in France (certified since 2002), François Isambert came up with the idea of producing trout, in order to launch on the market preserves of very high quality small fish entirely labelled AB, composed only of ingredients organic products of selected origin. He then joined forces with Ilias Zinsstag and Laurent Despeyroux to create SAS La Truitelle. Trout are rainbow trout (Oncorhynchus mykiss) aged at least 8 months and weighing about 15 g. They are raised in absolute respect of the organic aquaculture charter and are processed completely by hand, without prior freezing.

I can't buy these again—La Truitelle has beautiful branding and a great story—but unfortunately, these tins were a letdown. I purchased both the Mountain Troutlings with Wasabi and Mountain Troutlings with Kaffir Lime, and multiple customers reached out with the same complaints: the fish is unpleasantly mushy, and the unique flavor notes promised on the label (wasabi, horseradish, kaffir lime) are barely detectable, if at all. I’ve tasted them myself and sadly have to agree.
