We have rediscovered this autumnal richness by transforming it into a jewel of the table. Chestnuts are excellent as a dessert but become even more exquisite when paired with cold cuts such as lard or game meats. Drained from their syrup and served on a mixed platter of cold cuts (exceptional when wrapped in lard), they make an unusual appetizer. Ideal when paired with cheeses. Excellent as a dessert or with ice cream.
