Our beers are crafted based on the traditional criteria of top fermentation and bottle refermentation, which give the precious beverage a unique and authentic flavor. Not many know that beer is a very ancient drink and that, in the past, it was often substituted for a meal due to its nutritional properties. The pyramids of ancient Egypt would not have been erected if it weren't for beer! After the first slow-maturing fermentation that takes place in steel vats at a controlled temperature, the beer is bottled where the second fermentation occurs for the formation of foam, providing continuously evolving aromas and flavors, which is why a tiny residue of yeast is always visible at the bottom of the bottles. Additionally, we wanted to adapt the Belgian style of our beers to flavors linked to our land; they are free of preservatives and chemical stabilizers. The beers are produced in a wonderful hilly area in the Sicilian hinterland, which in the past enjoyed a certain prosperity mainly derived from wheat production. In fact, our beer is made using malted cereals, high-quality hops partly produced within local farms, and selected yeasts. A detail not to be overlooked is the fundamental role that water plays in the production of craft beers, and fortunately, we can boast untreated spring water that has nothing to envy from the most famous Alpine mineral waters. All the beers are: unpasteurized, unfiltered, and bottle refermented, without preservatives and chemical stabilizers, but only natural ingredients.
