After harvest, the legumes are preserved without the use of chemicals. It is a legume characterized by its unmistakable mottled ivory-colored skin tending to pink and with a robust consistency. It is a legume rich in fiber, vitamins and iron, and it is also a significant source of magnesium and potassium. Ideal to be eaten cold to make delicious salads or to prepare hot soups or the typical pasta and beans. Great as a meat substitute.
