Short white: Italian durum wheat semolina pasta, bronze-drawn and dried at a very low temperature, 37 degrees. Thanks to this drying process, it is particularly digestible and suitable for people sensitive to intolerances. Very rough on the surface, it is also very porous, capable of growing when cooked, and of absorbing condiments. It is an “Old-Fashioned” product.
