About Salumi Chicago
Greg Laketek is a salumi producer (salumiere) and co-founder of Salumi Chicago, in Chicago, IL. Determined to produce the highest quality cured meats, like made in Italy, Greg booked a one way ticket to Parma, Italy and said he wouldn't come back until he learned how to make salumi with the best of them. Greg trained in Zibello, Italy and produced salumi that would later on be sold to some of the best restaurants in the world. When he was ready, he came back to Chicago and started producing salumi exactly how he did in Italy. Each recipe developed, shares a backbone of the same production standards. Salumi Chicago is the only facility in the US that doesn't use sugar or dextrose at all, and uses Free to Roam certified pork. We are producing clean, natural and simple salami that are allergen free, made by hand with an extra attention to detail. The only salumi manufacturer in the US who does not use sugar or dextrose in its recipes

My customers are loving the Salumi Chicago products. No added sugar is an important selling point. The flavors are delicious, and the slightly more course grind on the meat gives a very satisfying bite. The pepperoni is not very spicy, just a touch of heat. This brand checks off a lot of boxes, and we love it. Will definitely order again.
