I offer with this Genmaicha a factual take on a Japanese classic. The blend of Bancha green tea and roasted brown rice yields a liquor with clear notes of toasted grains (popcorn). A comforting, non-bitter drink whose low caffeine content allows it to be enjoyed throughout the day. Composition: The structure of this blend is based on a Japanese tradition dating back to the Edo period, originally conceived to make tea more affordable. The Bancha base Bancha green tea comes from more mature leaves, harvested after the spring shoots (Sencha). This maturity gives the leaf a naturally low caffeine content and a less vivid vegetal profile, ideal for taking a backseat to the rice’s aromatic strength. The roasting of the brown rice The rice (genmai) is roasted using a controlled process. Some grains burst under the heat, resembling popcorn. This roasting brings a natural sweetness, notes of hazelnut, and a roundness on the palate that completely eliminates the bitterness of the green tea.
