Goma-sio, from the Japanese goma (sesame) and shio (salt), is a condiment to sprinkle on food. The sesame seeds and salt are lightly roasted over a wood fire and then ground on a stone mill. Each particle of salt is then coated with the oil from the sesame seeds. This coating neither masks the flavor nor the nutritional qualities of the sesame, but allows better assimilation of the salt by making it more plant-based.
