Oliváki is all about taste and freshness. It is early harvest, cold-pressed within hours of the fruit being picked, resulting in polyphenol-rich, low-acidity oil. The flavor profile reflects the land it comes from - tomato leaf, cut grass, green apple, with a balanced peppery finish. At Small Olive, we work closely with small family farms in Greece, and Oliváki is the direct result of our work with the Stavropoulos family and their certified organic family estate in Patras on the Peloponnese peninsula of southern Greece. For five generations, they have tended the same Koroneiki trees on the same hillside farm - with the patience and care that only comes from knowing a piece of land that well.
