Modica chocolate, in dialect "ciucculatti muricanu," is obtained from a particular "cold" processing of chocolate. During the Spanish domination of Sicily in the 16th century, this processing method was introduced in the County of Modica. The Spaniards learned the technique of processing cocoa beans from the Aztecs and were the first to add sugar to cocoa, creating the first archaic form of chocolate and spreading it throughout their domains, including the County of Modica. In 2018, Modica chocolate received the Protected Geographical Indication (PGI) recognition from the European Union.
