Likouala pepper is to Congo what Voatsiperifery is to Madagascar. It is a wild and remarkable pepper. It is harvested in the wild, developing an astonishing aromatic complexity. It offers a spicy, aniseed, almost minty flavor with notes of thyme and fennel to leave a feeling of freshness upon tasting. It is a milder pepper than black pepper. This pepper, sometimes called “Gorilla pepper or Ashanti”, is harvested by the indigenous Baaka population from the village of Mobangui in the Likouala department, it is one of the last “hunter-gatherer” tribes in the Congo Basin.
