Voantsy Perifery is a wild pepper that grows as vines in the tropical rainforest areas of Madagascar. Not very spicy, but very aromatic, it has notes of fresh earth, subtly woody. This pepper is used in all dishes even if its main use is to spice up meat dishes, mainly cooked red meat or carpaccio, but also white meat and poultry. It is perfect for giving character to sauces: to optimize its flavor, it must be allowed to infuse into the sauce so that it rehydrates.
