Made in a unique dual-coagulation process, it uses both traditional French calf rennet and Iberian cardoon thistle flowers rennet. Aged for 30 days, the washed rind develops an orange hue, as the interior becomes lusciously smooth and silky, creamy, balanced, and boasting notes of apple, cabbage and roasted peanuts. Great for melting too! GOOD TO KNOW: • Packaged, barcoded, grab-and-go ready. No need to cut, wrap, weigh, or label in store. • Minimum Net Weight: 4.5oz / 125g (whole wheel) • Requires refrigeration • Breathable wrapping may release natural cheesy aromas in shipping/storage. That's normal. • While we express-ship cold, room temperature arrival is OK as this cheese cave-aged at 55ºF for weeks. Temperature loss can only occur toward the end of transit.
