Organic durum wheat from Southern Italy cold-ground semolina (<40° C) bronze drawing drying at a maximum of 80° C for a minimum of 6 hours The organic durum wheat used for the production of this pasta is sown in autumn, in rotation with legumes, vegetables and fodder. The control of foreign herbs is carried out with summer plowing, false sowing and mechanical means. The harvest takes place at full maturity, between mid-June and the end of July, depending on the years and elevations. In order to preserve the organoleptic characteristics of the raw material, the semolina is cold-ground. Bronze drawing makes this paste rough and porous, allowing it to retain and enhance sauces and condiments.
