The broth is gelatinized before being mixed in with the rest of the filling, so when the dumpling is steamed, BOOM, SOUP! I love the product, but inventory management is lacking. I was shipped just over 85% of my order, but received no notice of missing products, no update on my invoice, no refund for the missing items, and they are still listed as in stock. Items DID come in a week later and I have updated my review to reflect that
