The caper bush is a modest shrub that particularly thrives in the poor and rocky soils of Italian islands, such as Sicily or Pantelleria. In fact, it is almost impossible to plant it anywhere other than around the Mediterranean: it loves the sun! Discreet, it grows along the edges of paths and houses, and sometimes even in old walls, and it is barely noticeable until, come summer, it adorns itself with magnificent, highly fragrant white flowers, with long pink or purple stamens. Except that, to enjoy it, you must pick (by hand!) its delicious flower buds, called capers, before this stage, which are most often preserved in brine.
