Our partner in Umbria, Italy produces from his 100-year-old Olive Grove the most delicious extra virgin olive oil available today. All production is by hand and his family numbers each tin by hand too. Only 684 tins were produced from the 2025/26 vintage. The three-olive in every tin. 1. Frantoio •Characteristics: This is one of the most iconic olive varieties in Italy. Frantoio olives produce a well-balanced oil with fruity notes of fresh grass, green almond, and a slight peppery finish. •Role in Blends: Often a cornerstone of Umbrian olive oil blends due to its aromatic complexity and balanced flavor. •2. Leccino •Characteristics: Leccino olives yield a milder and more delicate oil compared to Frantoio. The oil is often less bitter and spicy, with subtle notes of sweetness, almond, and herbs. •Role in Blends: Used to temper the intensity of other olives, creating a more harmonious and approachable flavor profile. 3. Moraiolo •Characteristics: This variety is highly prized for its bold, intense flavor. Moraiolo olive oil is peppery, slightly bitter, and packed with robust aromas of artichoke, green tomato, and fresh herbs. •Role in Blends: Often used to give olive oil its signature Umbrian "kick," contributing depth and intensity.
