The Zolfino Bean is a typical variety from some areas of Tuscany. Until a few years ago, it had been practically abandoned due to its difficult cultivation and extreme sensitivity, especially to waterlogging. Recently, it has been rediscovered thanks to its extremely particular qualities; the name originates from the light yellow color typical of sulfur; it has an extremely thin skin that makes it easily digestible compared to other legumes and a dense and almost pleasantly creamy texture. With an intense flavor that pairs well with many typical dishes, it holds up very well to cooking, and therefore we couldn't help but offer it to our most demanding consumers.
