Ceylon cinnamon is the most expensive “true cinnamon”. But most cinnamon products contain Cassia, which is poorer in antioxidants. So look for Ceylon cinnamon, which also contains much less coumarin, a compound potentially toxic to the liver, than Cassia. Cinnamon is above all a very antioxidant food that reduces the damage that free radicals cause to cells. A study compared the antioxidant content of 26 different herbs and spices and concluded that cinnamon has the second highest amount of antioxidants (after cloves).
