Carnaroli Classico rice is a highly prized variety of superfine rice. The flavor is distinct, tending towards sweet, with a firm and elastic grain even after cooking. The grain is large and about 7 mm long, elongated in shape, and cerulean in color with a small white central pearl. Our Carnaroli Classico rice is obtained exclusively from controlled and certified seed as "CLASSICO" and as "CARNAROLI DA CARNAROLI PAVESE." Processing: Rice obtained in 1945 from the cross between Vialone (with a high amylose content that ensures cooking resistance) and Lencino (long, large, and very pearly rice).
