This honey is another varietal unique to the Big Island. Harvested in Spring from our North Kohala bee yards, it tends to stay liquid longer than any other honey our hives produce. The Java Plum Blossom honey has a powerful taste profile of ripe tropical fruits such as guava and mango. Its extremely sweet flavor carries the bold and pungent body of exotic honey from the Hawaiian Islands. The honey arrived crystallized. Whether or not this can be remedied by standing in hot water, or is a natural process, this makes the honey difficult to sell as uneducated consumers assume defective.
