The coffees in the Légendes collection are roasted only once a week, ensuring consistently very fresh roasting. Thus, the time between ordering and shipping can be up to 8 working days. In 10 years, Qima Coffee has established itself as a reliable partner for sourcing quality coffees in a country ravaged by war and corruption. It is impossible here to ensure traceability all the way to the farmer, which is a prerequisite for the Légendes range, but we consider that Yemen occupies such an important place in the history of coffee that it had to be included in this range of the world’s best coffees. Qima’s teams select and buy the cherries from a network of small producers, here in the village of Ans, perched at 2,000 meters. For this competition lot, only the best cherries go into fermentation, without using water, which is so scarce in Yemen. Here, a dry carbonic maceration gives the coffee this extravagant yet controlled profile.
